[RECIPE] Chocolate cupcakes

Moist Chocolates Cupcakes

1/2 Cup cocoa powder
1 cup boiling water
1 1/2 cups flour
2 tsp baking powder
1/4 tsp salt
1/2 cup unsalted butter
1 cup sugar
2 eggs
2 tsp vanilla extract

Methods
1. Mixed cocoa powder in the boiling water. Put aside until next step
2. In another bowl shifted the flour and baking powder. Add salt then mixed them well
3. Whisk butter and sugar until smooth and light (normally I used speed #4)
4. Add egg one by one beat in a slow speed (#2), add also vanilla extract
5. Add bowl of flour in step 2 gradually into the mixture and beat them  until well mixed. Make sure scraped the mixing bowl.
6. Add the cocoa powder liquid in step 1 into the mixing bowl.  Using the hand egg beater mixed them well.  Do not over beat.
7. Scoop the mixture into the cupcake cups.  For medium size it u can get about 16 cupcakes.
8. Baked it in a pre heat oven for 175 C about 20 - 25 min.


Butter Vanilla Icing

250 G Butter
400 G Icing sugar
1 tsp vanilla extract

Methods

1. Beat Butter until white and fluffy
2. Shift the Icing sugar
3. Add the vanilla into the mixture beat a bit.
4. Add the icing sugar, beat in high speed until fluffy
5. Scoop it into the piping beg and piped it on the top of the cakes.
